Concrete Grinding is also often referred to as Honing. It is simply removing the top layer of concrete to produce a flat uniform surface. Topical Sealers are traditionally used indoors and can become slippery when wet but provide maximum protection to the concrete surface once exposed by grinding.
Penetrating sealers are mostly used outdoors as they provide a level of protection without creating a slippery unsafe surface and still retain the natural raw look of the concrete.
Both are available in water based environmentally friendly options.
